Both international and domestic funding agencies are largely focused on the need to maximize calorie production using cereal crops to feed an ever expanding world . While this focus is understandable, it must be balanced with the need for diversity in the human diet. A greater empasis on legume (pulse) crops and horticultureal crops that have long shelf life will enhance nutriion and dietary balance, rather than feeding high levels of calories from cereal crops to satiate the populous. Legumes also benefit the soil and can provide nitrogen for cereal crops.
